Since beans is one of the “B’s” in G-BOMB’S, I am inspired and motivated to include more beans in my diet.
So I present to you a traditional Brazilian dish called Feijoada! I love hispanic food and anything spicy! You can adjust the spicyness to your liking!
Brazilian Black Beans
1 yellow onion
3 garlic cloves
2 yams/sweet potatoes
1-2 bell peppers
1 can diced tomatoes
1 serrano chili pepper (seeded)
1-2 chipotle peppers with some adobe sauce
1 tsp ground cumin
2, 16 oz cans of black beans (drained and rinsed)
small handful cilantro
Chop vegetables and saute in 1/4 c water in a large saucepan or pot add cumin and tomatoes. Heat and cover for 10-15 minutes, until sweet potato is tender. Add 2 cans of black beans and reduce heat. Cook for a few more minutes. Turn off heat, add chopped mango chunks and cilantro, take off the stove and let cool. Serve! Bom apetite!Print This Post
